Whole Smoked Bird

We brine all of our birds for a minimum of three hours to ensure every bite is tender and juicy. We wanted the smoke to be the star of the show so we use minimal spices and rotate our wood selection (Pecan, Avocado, Citrus fruit trees...) weekly to keep things interesting.  
 
Each bird is smoked for 4 hours and is basted with fresh orange juice from oranges picked localy in our humble little orchard.
